40 year old vines on limestone soil. Whole bunch pressing of the harvest without sulphites. This cuvée gives the full aromatic palette of ripe Sauvignon. The Sauvignon Gris develops its floral potential with acacia flower on the first nose and white peach at the opening. The Sauvignon Blanc offers aromas of pears and then exotic fruit. The taste is that of limestone, structured, fresh with a salty finish.

Vinification Fermentation takes place 20% in wooden barrels and the rest in concrete barrels. Malolactic fermentation is carried out in wooden barrels before the batch is assembled in concrete barrels.
Aging On lees for 6 months in concrete barrels aims to harmonize the “fat” of the wooden barrels and the minerality of the in concrete fermented barrels.
